I found the fat free coconut milk recipe on this channel - \r

Curry Sauce Ingredients:\r
1 cup fat free coconut milk - see recipe here: \r

1/3 cup coconut pulp leftover from making coconut milk\r
1-2 cups cherry tomatoes\r
1 stalk celery\r
1/4 cup sundried tomatoes\r
half tsp cumin\r
1/4-1/2 tsp chill powder\r
half tsp garam masala\r
half tsp curry powder\r
juice of half a lemon\r
small piece fresh ginger\r
1 green onion\r
1 date\r

Cauliflower Rice: 1 head of cauliflower, pulsed into rice like pieces in blender or food processor\r

Other Ingredients: (ex quantities are not important, just add as much as you want)\r
chopped carrots\r
chopped celery\r
thinly sliced mushrooms\r
1 package jackfruit, chopped into bite size pieces \r
1 package durian, sliced into bite size pieces\r

Directions:\r

Blend all sauce ingredients. Pour into large bowl. Add remaining ingredients, stir, serve over cauliflower rice.DEVOUR!!
